娘惹咖喱鸡的做法

食材用料:

原料 Ingredients:
鸡/鸡腿 chicken/ch575g
土豆 Potatoes2-3pcs
咖喱叶 Curry Leave适量,appropriate amount(大约15片)
柠檬叶 Kaffir Lime适量,appropriate amount(大约6片)
咖喱粉 Meat Curry1 n 1/2tbspn
水 Water300ml
椰浆 Coconut Milk200ml
辣酱 Chili Paste:
柠檬草 Lemongrass4pcs
小洋葱 Shallots16pcs
蒜头 Garlic5pcs
蓝姜 Blue Ginger1块,1block
黄姜 Turmeric2块,2block
鲜辣椒和干辣椒 Fresh n3-4pcs fresh & 15pcs dried
调料 Seasoning:
盐 Salt适量,appropriate amount

菜谱做法:

  • 1.)切成小块:蓝姜,柠檬草,小洋葱,蒜头,黄姜,鲜辣椒和干辣椒(需泡水去籽)加点水搅拌成煳状。
    Cut into small pieces: blue ginger, lemongrass, shallots, garlic, turmeric, fresh chilli and dried chilli (soaked n remove seeds) add a little water and stir into a paste.

  • 2.)鸡肉切块用一点点的咖喱粉和盐稍微腌15~20分钟。
    Chicken with a little bit of curry powder and a little salt marinate for 15 to 20 minutes.

  • 3.)然后锅里下2 tbspn的油 (如果用的鸡肉块不带皮请自行增加1 tbsp的油),把步骤1的香料翻匀加入咖喱叶和柠檬叶炒香到干身(约15分钟)。
    Then the next, add 2 tbspn of oil into pot (if using chicken without skin kindly addition 1 more tbspn of oil), add spices (step 1), kaffir lime leaves and curry leaves fry until dry (about 15 minutes).

  • 4.)把腌过的鸡肉块倒入翻匀,加入椰浆,水(盖过鸡肉块便可)放一点盐让它慢慢的滚。
    Add the marinated chicken stir well , add coconut milk, water (overshadowed the chicken) put a little salt and let it slowly boil.

  • 5.)看到开始滚的时候,就加土豆让它拌入咖喱汁里面盖上锅盖用小火焖大约30分钟至土豆变软。
    When start to boil, add potatoes mix with curry sauce, cover and simmer for about 30 minutes until the potatoes are soft.

  • 6.)关火后盛出美味的咖喱即可享用!
    Turn off the heat, dishing out a delicious curry, can enjoy!
