  • 用料:

  • 鸡/鸡腿 chicken/ch  575g
  • 土豆 Potatoes  2-3pcs
  • 柠檬叶 Kaffir Lime  适量,appropriate amount(大约6片)
  • 咖喱粉 Meat Curry  1 n 1/2tbspn
  • 柠檬草 Lemongrass  4pcs
  • 原料 Ingredients:
  • 咖喱叶 Curry Leave  适量,appropriate amount(大约15片)
  • 水 Water  300ml
  • 椰浆 Coconut Milk  200ml
  • 辣酱 Chili Paste:
  • 小洋葱 Shallots  16pcs
  • 蒜头 Garlic  5pcs
  • 蓝姜 Blue Ginger  1块,1block
  • 黄姜 Turmeric  2块,2block
  • 鲜辣椒和干辣椒 Fresh n  3-4pcs fresh & 15pcs dried
  • 调料 Seasoning:
  • 盐 Salt  适量,appropriate amount

做法:

  • 1. )切成小块:蓝姜,柠檬草,小洋葱,蒜头,黄姜,鲜辣椒和干辣椒(需泡水去籽)加点水搅拌成煳状。
    Cut into small pieces: blue ginger, lemongrass, shallots, garlic, turmeric, fresh chilli and dried chilli (soaked n remove seeds) add a little water and stir into a paste.
  • 2. )鸡肉切块用一点点的咖喱粉和盐稍微腌15~20分钟。
    Chicken with a little bit of curry powder and a little salt marinate for 15 to 20 minutes.
  • 3. )然后锅里下2 tbspn的油 (如果用的鸡肉块不带皮请自行增加1 tbsp的油),把步骤1的香料翻匀加入咖喱叶和柠檬叶炒香到干身(约15分钟)。
    Then the next, add 2 tbspn of oil into pot (if using chicken without skin kindly addition 1 more tbspn of oil), add spices (step 1), kaffir lime leaves and curry leaves fry until dry (about 15 minutes).
  • 4. )把腌过的鸡肉块倒入翻匀,加入椰浆,水(盖过鸡肉块便可)放一点盐让它慢慢的滚。
    Add the marinated chicken stir well , add coconut milk, water (overshadowed the chicken) put a little salt and let it slowly boil.
  • 5. )看到开始滚的时候,就加土豆让它拌入咖喱汁里面盖上锅盖用小火焖大约30分钟至土豆变软。
    When start to boil, add potatoes mix with curry sauce, cover and simmer for about 30 minutes until the potatoes are soft.
  • 6. )关火后盛出美味的咖喱即可享用!
